Rivers of Lights: We Are One (Full Show) Walt Disney World Animal Kingdom

During our vacation to Walt Disney World at the beginning of this year, one of the four parks we were able to visit was Walt Disney’s Animal Kingdom. While there were tons of thrilling rides, tasty eateries, and amazing stores to shop at our favorite experience was the Rivers of Light: We Are One show. This was a beautiful water and light show that we were able to capture for all of you to enjoy!

Dalgona Coffee/Whipped coffee

Need a pick me up? This is the drink for you!

Dalgona Coffee is a delicious whipped coffee that will give you the energy you need and is very simple to make.

Ingredients:
- 2 tbsp instant coffee
- 2 tbsp hot water
- 2 tbsp sugar
- 1/2-3/4 cup milk (dairy or non-dairy)

Directions:
- heat water
- place ingredients in a bowl
- using a hand mixer, whisk, or fork continuously mix mixture together until a whipped consistency is achieved

hot- heat 1/2-3/4 cup of milk, pour whipped coffee over and mix.
iced- pour 1/2-3/4 cup of milk over ice, pour whipped coffee and mix.

Holiday Snack: Pepperoni & Cheese Croissants

It’s our favorite time of year! Holiday season is here!

We love quick and easy snacks we can enjoy while we cozy up by the fire and watch our favorite holiday movies. This recipe in particular can be very fun for kids to participate in. I know our eight year old son had a blast helping me make these. Here you go!

Be creative! Use any cheese or sliced meet you prefer! Don’t forget your favorite glass of wine! Enjoy!

Pepperoni%2BCheese%2BCroissants

Ingredients:
- Pillsbury Crescents
- String Cheese
- Pepperoni
Directions:
- Unfold the crescent dough and separate into squares
- Pull string cheese apart and layer onto the dough
- Place pepperoni over the string cheese layer
- Add another layer of string cheese
- Fold dough- twice if possible
- Bake at 350 degrees for 15-20 mins

Meal Prep: Overnight Oats

Eating healthy meals throughout the day can be challenging, especially during the work week. Most of the time it can be easier to grab something at the cafeteria or nearby fast food joint during your lunch. However I’ve found that prepping your meals for the work week helps tremendously. Usually I try to designate one day for grocery shopping and another for actual meal prepping.

While there are many meal ideas I’d like to share, I’ll start by sharing this easy grab and go breakfast you can prep for your work week! Overnight oats are my go-to breakfast preps because they're simple, versatile, nutritious, and very easy to make. This is my favorite way to have them. However there are various ways your can make them to your liking so be creative and enjoy!

Ingredients:
- 1/2 cup Oatmeal
- 1/4 cup Chia seeds
- 1 tbsp Agave nectar
- 1/2 tsp Vanilla extract
- 1 cup Almond milk
- 1 cup Strawberries and bananas

New Years!

2018, New Years Resolutions?

At the beginning of our marriage we made a habit of writing down our new years resolutions, but after a few years we made some changes and started doing things differently. Every so often we take a moment to reflect on our life, especially when we face change. What we've learned is that with time comes change, whether we like it or not. The world will continue to change and grow, now are you willing to change and grow along with it? 

Instead of writing down our new years resolutions and focusing on accomplishing just those goals, we've created a system of setting weekly and/or monthly goals in all areas of our life. This allows us the flexibility to keep an open mind and welcome new goals throughout the year. To be successful in accomplishing these goals we had to be able to accept and adapt to change to allow growth and opportunity.

In the beginning we noticed the most significant change we had to make was our mindset. We had to see potential in everything and not only to search for opportunities, but to create them ourselves. We've faced challenges along the way and continue to until now, but we try to remain focused and stay positive in every challenging situation we face.

What helps us stay on track is redirecting our focus by referring back to our goals. Listed below are some tips on how you can set your goals:

  • Create a Goals note on your phone or notebook

  • Determine weather you want to set weekly/monthly/quarterly goals

  • Create a habit- have a designated time or day for reviewing your goals

  • Set both long/short term goals

  • Refer back to the goals you've created to help you stay focused and motivated

We encourage you all to set more than New Years Resolutions! Don't limit yourselves to just those goals you set in the beginning of the year. Continuously seek opportunity to accomplish more to get you closer to a more successful you!
